Guided by industry experts, we’ll explore how aroma compounds found in herbs and botanicals, known as terpenes, shape flavor, influence our senses, and interact with food and beverages.
Throughout the evening, guests will learn the fundamentals of terpenes and flavorants with Cannescape, discover how terroir and cultivation practices influence plant expression with Sonoma Hills Farm, and gain insight into the art of pairing herbs with seasonal cuisine and dessert.
Each course will highlight a featured terpene profile, inviting guests to engage their senses of smell and taste while comparing aromatic notes across Sonoma Hills Farm herbs and thoughtfully crafted farm-to-table dishes designed to complement these flavors. Guests will also enjoy signature CBD-infused cocktails by Jamie Evans, The Herb Somm, and explore an array of infused delicacies hosted by ONA.life.
To conclude the evening, guests will participate in a guided sensory pairing activity led by The Herb Somm, exploring some of the most common terpene profiles found in cannabis alongside terpene-inspired handcraftedchocolates.
